Now to the gooooood stuff 👇🏼

Inspired by @_kikifit_ crockpot but tweaked to cook in IP and swapped a few ingredients 

Ingredients:
• 1-ish pound of boneless skinless chicken thighs roughly chopped
• 1 medium yellow onion, finely diced
• 4-6 cloves fresh garlic, pressed
• 1/3 cup coconut aminos or soy sauce
• 1/4 cup ketchup
• 1/2 cup honey
• 2 tbsp avocado oil or sesame oil
• 1/4 cup water
• 3 tsp corn starch or arrowroot powder 
• 1 lb steamed chopped broccoli 
• 1lb yakisoba noodles or other Asian noodles of choice
• sesame seeds + green onion for garnish

Instructions 

1. place chicken in the pot of your pressure cooker, season with salt and pepper 
2. in a small mixing bowl, mix together the onion, garlic, aminos, ketchup, honey and oil. Pour it over the chicken in the pot.
3. Turn instant pot on and set to high pressure for 15 minutes. After the 15 minutes are done, release the pressure. This is a quick release not a natural release recipe.
4. While chicken cooks, steam your broccoli. I use organic frozen broccoli from Costco that I steam in the microwave. 
5. Prepare yakisoba noodles as instructed, but don’t fry or cook them yet.
6. In a small bowl, whisk together warm water and the cornstarch or arrowroot powder. 
7. When instant pot is done and pressure has been released, remove the chicken to a plate. Add cornstarch mixture and stir well. 
8. Turn on instant pot sauté function and let sauce thicken for 2 minutes. 
9. Add chicken, noodles and broccoli to sauce in the pot. Toss to combine. Let sit together for 5-10 minutes to allow flavors to meld. 
10. Top with sesame seeds and green onions. Enjoy!

There you go! An easy, real food recipe that’s delicious and nutritious ✨ you could easily swap out the broccoli for a stir fry blend or use rice instead of noodles. I added a little sriracha for extra spice 🌶️

I use my favorite basic sandwich bread dough, with a couple key changes in the process. 

• I let the dough rise after kneading, for about 30 minutes 
• I do NOT punch it down, I do carefully separate the dough into 10-12 balls
• I pinch the balls into rolls and arrange on a baking sheet
• I gently flatten them so they end up more like a bun and less like a dinner roll
• I let them rise again while the oven preheats 
• I do a little egg wash ✨
• I bake until they read 200° internally about 15-20 minutes

Kids need plenty of nutrient dense, vitamin + mineral rich foods to grow and thrive. A lot of the foods that are naturally high in those important nutrients are despised by picky kids—I’m looking at you broccoli, kale and spinach 🫣 but you know what even the pickiest kids usually love? Carbs! Bread, muffins, cereals, crackers, the list goes on…

When I began using whole grain wheat, I was worried my picky eaters wouldn’t like the switch from regular all purpose flour. But they absolutely love my freshly milled baked goods 🤍 it’s been a blessing for all of us.

Here’s the recipe 👇🏼🎃 • 1/2 c avocad Here’s the recipe 👇🏼🎃

• 1/2 c avocado oil or melted coconut oil
• 1 c pumpkin purée
• 2 eggs beaten
• 1-2 tsp vanilla extract 
• 1 tsp baking soda
• 1/2 tsp baking powder
• 1/2 tsp sea salt
• 1 1/2 tsp pumpkin pie spice
• 280g or about 1.5c soft white wheatberries (milled into a fine fluffy flour)

Put all of those ingredients into your bread machine. Set it to the quick bread setting and let it work it’s magic ✨

Note: if you’re using a Zoj I’ve heard to use the dessert setting

Did you know you could make INCREDIBLE ribs using Did you know you could make INCREDIBLE ribs using your Ninja Foodi 🤯 (or Instant Pot + an air fryer) 

I’ve been making these ribs for years and they’re better than any grilled or smoked ribs we’ve ever made, not to mention a million times easier. 

They’re ready to eat in under an hour, but thanks to the pressure cooker they come out fall off the bone tender perfection 🤌🏼

Air frying (or broiling if you don’t have an air fryer) is the GAME CHANGING hack ⚡️ it takes the pressure cooked tender ribs you see in the first pic to the bbq saucy caramelized perfection you see in the after 

If you’re not making your ribs like this you’re missing out 👀 I loveeee smoking meat but even with a smoker, this way of making ribs has stayed my favorite!

The reason isn’t what you think 👀 I WISH I w The reason isn’t what you think 👀

I WISH I would’ve learned how to make homemade bread years ago back when I first got married. Not just so we could’ve been eating this incredible bread back then, but because of everything else bread making has brought me. 

Learning to bake bread has opened the door to baking literally everything else we consume, motivated me to start cooking our meals from scratch. It’s built my confidence in myself as a wife and mother knowing I’m able to make nourishing meals + healthier treats for my husband and children. It boosted my confidence in the kitchen. 

I spent a long time feeling lost, bored and defeated in the kitchen. Like literal years. I had very little confidence left, around cooking + baking and also just in general. 

When I got married seven years ago, I went from working full time in a high paced high end retail environment to being a full time homemaker and stay at home wife. Don’t get me wrong, it’s absolutely what I wanted and what I prayed for. I just didn’t expect the transition to be so difficult. I didn’t realize how utterly unprepared I was. 

I look back at that girl who felt like such a failure and just want to hug her and tell her to just start baking bread. That she’ll probably have a few dense loaves, but after a few tries they’ll get better. And better. That her confidence in the kitchen, in herself, in her role as a wife + mother will blossom. 

If you’ve been watching breadmaking videos online but haven’t taken the leap into making it yourself, stop talking yourself out of it saying “I can’t do that it’s too complicated” or “I don’t really need to learn to make bread, I can buy it at the store”. 

You CAN do this! You can make the bread. The first loaf might not be perfect, it probably won’t be. But with practice, it’ll get better. 

Learn the skill. It’s about so much more than just bread 🤍
